
I had to bake a batch for a photo! These Co-Co Roons are ALWAYS a hit and an easy and quick treat to take to parties. I love having one (OK maybe 2) when having a cup of tea or coffee.
They are gluten free, dairy free, and soy free! I named them after my cousin, Morgan, who first made them for me several years ago.
Almond flour is a good source of healthy fat, protein, and calcium.
Coconut is high in manganese, (essential for bone health & the metabolism of carbohydrates, proteins, and cholesterol). They’re also rich in copper and iron, (help form red blood cells, as well as selenium, an important antioxidant that protects your cells).
Dark Chocolate is an antioxidant and a good source of fiber, iron, copper and manganese. Enjoy Life Chocolate chips are gluten, soy, and dairy free and taste better than regular chocolate chips (that have junk, like milk fat, soy lecithin, and natural flavors in them).
Maple Syrup also contains antioxidants and is a good source of manganese, zinc, calcium, and potassium. It also has a low glycemic index.
Coconut Oil is a saturated fat known as medium-chain triglycerides (MCTs). It contains many nutrients including fiber, Vit. C & E (antioxidants) folate, and magnesium.
Vanilla is an antioxidant and antibacterial.
Morgan’s Co-Co Roons
Makes about 26 cookies
Ingredients:
2 C. Organic dried, shredded coconut
2/3 C. Enjoy Life chocolate chips – Dark
1/2 C. Pure maple syrup
1/3 C.+ 1 Tbsp. Coconut oil
2 tsp. Vanilla
1/2 tsp. Salt
Directions:
Pre-heat oven 350
Combine all ingredients in a mixing bowl. Use a medium cookie scoop and drop cookies on a baking pan lined with unbleached parchment paper.
Bake 10-15 minutes.
